The aroma of pecan-encrusted catfish and<br \/>\npesto pizza filled the air of the University of<br \/>\nMississippi&#8217;s Lenoir Hall this past week as the student-run<br \/>\nrestaurant opened for its first week of service.<\/span><br \/>\n<br \/><!--more--><br \/><span>The restaurant-type operation is a required laboratory<br \/>\ncourse for UM students majoring in dietetics and in<br \/>\nnutrition and hospitality management. Lenoir Hall Dining<br \/>\nwas created to give students experience in all facets of<br \/>\nrestaurant operations. Beginning last year, the program was<br \/>\nchanged to focus more on restaurant management than on food<br \/>\npreparation.<br \/>\n<\/span><\/p>\n<p>\n\u00a0\n<\/p>\n<p>\n<span>The entire program operates under a Point-of-Sale system<br \/>\nthat enables students to track sales, analyze data and<br \/>\nlearn how to operate the POS equipment. Recently hired head<br \/>\nchef for the program is Jason Lafferty, a graduate of<br \/>\nJohnson &#038; Wales University, College of Culinary Arts.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;Although our program has always excelled in offering<br \/>\nstudents a variety of food service exposures, our goal is<br \/>\nto provide students in dietetics and hospitality management<br \/>\nwith more advanced culinary arts exposures,&#8221; said Teresa<br \/>\nCarithers, FCS department chair. &#8220;We are experiencing a<br \/>\nrise in graduates who wish to further their education at<br \/>\nculinary institutes. To help them succeed, we will be<br \/>\nintegrating culinary arts more visibly in our labs and<br \/>\nadvancement activities. We especially excel in small,<br \/>\nintimate-type lunches that provide an ideal forum for<br \/>\nsmaller work groups, search committees, etc.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Lenoir Hall Dining offers lunch 11:30 a.m.-12:30 p.m.<br \/>\nTuesdays and Thursdays and dinner 6-7 p.m. Wednesdays.<br \/>\nReservations are recommended and can be made by calling<br \/>\n662-915-1863.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>The price of all meals is $7.50, which includes fresh<br \/>\nrolls, salad, entree, dessert and beverage. In addition,<br \/>\nthe food selections are more in keeping with those of an a<br \/>\nla carte restaurant, as opposed to the comfort food items<br \/>\noffered in the past. Menus change each week.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>The department boasts an enrollment of nearly 400 students,<br \/>\n261 of which are hospitality management majors and 81<br \/>\ndietetics\/nutrition majors. Graduates of the program go<br \/>\ninto a diverse range of careers, including resort<br \/>\nmanagement, hotel management, restaurant ownership and<br \/>\nevent planners, and administration of health care food<br \/>\nservice departments. The dining program allows students to<br \/>\nrotate through various positions within the operation,<br \/>\nincluding serving, cooking and management functions.
