With not one<br \/>\negg roll or bowl of fried rice in sight, the appetites of<br \/>\ndiners were satisfied with an atypical, three-course<br \/>\nChinese meal.<br \/>\n<\/span>\n<\/p>\n<p><!--more--><\/p>\n<p>\n<span>&#8220;China Table&#8221; was the first ethnic dinner hosted by Cook!<br \/>\nEat! Share!, a new multicultural organization founded to<br \/>\nfamiliarize the community with other cultures through<br \/>\nfood.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Under the direction of member Yang Liu, a pharmacology<br \/>\npostdoctoral research associate, group members prepared<br \/>\nvermicelli and seaweed salad, more than 250 Chinese<br \/>\ndumplings, Chinese barbecue ribs and green bean soup.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;I wanted to show people homemade (Chinese) food,&#8221; Liu<br \/>\nsaid. &#8220;America has a lot of Chinese fast food, but that&#8217;s<br \/>\nnot the way food actually tastes in China.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Daphne Ingene, counselor at the University Counseling<br \/>\nCenter and coordinator of Cook! Eat! Share!, said the<br \/>\ndinner&#8217;s success was a true collaborative effort.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;I am proud of the Cook! Eat! Share! members,&#8221; she said.<br \/>\n&#8220;They crossed over culture differences to cook Chinese food<br \/>\nand share the Chinese culture and traditions together.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>During the meal, Ingene and member Stephanie Sheng led a<br \/>\npresentation on the origins of several popular Chinese<br \/>\nfoods, and member Sheng Bi demonstrated how to cook Chinese<br \/>\ndumplings, or jiaozi.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Also known as potstickers in America, the dumplings are<br \/>\npan-seared, half-moon shaped pieces of dough stuffed with<br \/>\nground meat and vegetable filling. The dumplings were<br \/>\nserved with a soy-vinegar dipping sauce that is prepared<br \/>\nwith garlic, ginger and sesame oil. Bi, a doctoral student<br \/>\nin education, is a native of Shan Xi in northern China who<br \/>\nhas lived in Oxford for more than three years.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;We spent a lot of time researching for the menu because<br \/>\nthe culture behind the food is the message we wanted to<br \/>\nconvey,&#8221; Bi said.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Although Chinese culture has evolved because more people<br \/>\nprefer to buy food than cook, the making of dumplings on<br \/>\nthe eve of the Spring Festival, or the Chinese New Year, is<br \/>\nstill a popular custom, she said.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Since the preparation of dumplings can be time-consuming<br \/>\nand difficult, families traditionally come together and<br \/>\nmake large quantities for the holiday, she said. The<br \/>\nChinese New Year is celebrated on the first day of the<br \/>\nlunar calendar, usually corresponding to a date in late<br \/>\nJanuary or early February on Western calendars.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>A popular part of the main course was Chinese ribs. Unlike<br \/>\nAmerican ribs coated with barbecue sauce, Chinese ribs are<br \/>\nslowly grilled for an hour, then grilled 30 minutes more<br \/>\nwhile being brushed with a soy-vinegar sauce every two to<br \/>\nfive minutes, Bi said. Dinner guests Charlie and Althea<br \/>\nChurch of Oxford named the cold mix of vermicelli and<br \/>\nseaweed served as an appetizer as their favorite dish.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;I&#8217;ve never had anything like that before,&#8221; Althea Church<br \/>\nsaid. &#8220;It was so delicious.&#8221; Her husband, a senior research<br \/>\nscientist at the National Center for Physical Acoustics,<br \/>\nsaid he enjoyed learning about the origins of foods in<br \/>\ndifferent regions of China.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>The meal concluded with a cup of traditional green bean<br \/>\nsoup served as dessert. Green beans contain a great deal of<br \/>\nying, which means &#8220;sunlight&#8221; or &#8220;good,&#8221; Ingene said. &#8220;It&#8217;s<br \/>\na good soup to regain balance in their emotions,&#8221; she<br \/>\nsaid.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Cook!
