Courtesy photo.\n<\/div>\n<\/div>\n<p><span>OXFORD, Miss. &#8211; &#8220;We&#8217;re going to have to shoot that scene<br \/>\nagain,&#8221; said Theresa Stretch, food and nutrition specialist<br \/>\nfor the National Food Service Management Institute at the<br \/>\nUniversity of Mississippi.<br \/>\n<\/span><\/p>\n<p>\n\u00a0\n<\/p>\n<p><!--more--><\/p>\n<p>\n<span>&#8220;The cook and food service workers aren&#8217;t wearing aprons;<br \/>\nthat&#8217;s an important part of their school uniform,&#8221; said<br \/>\nStretch, scanning the six-member cast who were similarly<br \/>\nattired in khaki pants, dark shoes, blue T-shirts and<br \/>\nhairnets.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>With nearly 100,000 schools, plus hundreds of food<br \/>\nestablishments across America, being offered the use of<br \/>\nthis video, &#8220;Health Inspections in Schools: Supporting Food<br \/>\nSafety Programs,&#8221; and other training resources provided by<br \/>\nNFSMI, Stretch understands the importance of getting it<br \/>\nright.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;In 2004, there was a mandate that all schools<br \/>\nparticipating in the federal school lunch program be<br \/>\nrequired to have two health inspections per school year,&#8221;<br \/>\nStretch said. &#8220;This video is to help food service workers<br \/>\nunderstand what a health inspection is about, and to also<br \/>\nunderstand that the health inspector is not the enemy but a<br \/>\nuseful resource.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>It wasn&#8217;t the first time a scene had to be redone during<br \/>\nthe two days of filming this particular video. And,<br \/>\nalthough the scene in question was merely background<br \/>\naction, it was important that the seemingly insignificant<br \/>\ncafeteria scene was authentic.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>No, Stretch is not a professional film producer, nor is she<br \/>\naiming to be the next Steven Spielberg, but as a food and<br \/>\nnutrition expert at NFSMI, she understands the importance<br \/>\nof accurately portraying kitchen standards of health and<br \/>\nsafety in this video, which will soon be available via the<br \/>\nInternet.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>The video is intended to benefit such programs as the<br \/>\nfederal school lunch program, which provides safe and<br \/>\nhealthy meals to children of all ages. Nearly every public<br \/>\nschool in America participates in the program, which is run<br \/>\nby the U.S. Department of Agriculture. Half the nation&#8217;s 60<br \/>\nmillion students eat lunches prepared in school, according<br \/>\nto the department&#8217;s Web site.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;The video will help anyone working in food service<br \/>\nunderstand what food inspectors look for during site<br \/>\nvisits,&#8221; said Amy Casteel, NFSMI lead school meals<br \/>\nspecialist. &#8220;The video is essentially a training video that<br \/>\nsupports food safety programs.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Because the 15-minute film features &#8220;recommended tools for<br \/>\nbest practices&#8221; such as cooling foods rapidly and recording<br \/>\ntemperatures during food preparation, Stretch and Jeannie<br \/>\nSneed, both certified food safety professionals, oversaw<br \/>\nevery aspect of the filming.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Cast member Marybess Pritchett, an Ole Miss BFA in acting<br \/>\nmajor from Corinth, said Stretch obviously understands her<br \/>\nfield. Recounting the takes and retakes of the hand washing<br \/>\nscene, Pritchett said, &#8220;Who knew there were hand washing<br \/>\nsinks, food prep sinks and dish washing sinks. They made<br \/>\nsure we used the correct sinks for cooking and cleaning.<br \/>\nAnd Stretch instructed us on proper hand washing<br \/>\ntechniques. I have renewed respect for school food service<br \/>\nworkers and for film acting.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>After the intense filming, including hundreds of takes and<br \/>\nretakes, and dry nails from washing and rewashing her<br \/>\nhands, Pritchett said her first stint in this type of<br \/>\nfilming was tough.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;I am primarily a stage actor, although I have had some<br \/>\nexperience with film. I feel like stage acting and film<br \/>\nacting require the same amount of dedication and<br \/>\nimagination, but in film, a scene can be shot multiple<br \/>\ntimes with a variety of moods and intensions,&#8221; said<br \/>\nPritchett, 21, who has appeared in stage performances of<br \/>\n&#8220;Les Liasons Dangereuses,&#8221; &#8220;Romeo and Juliet&#8221; and<br \/>\n&#8220;Lysistrata.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Matthew Graves, producer and director for UM&#8217;s Center for<br \/>\nMedia and Documentary Production, directed the filming. He<br \/>\nsaid he &#8220;definitely expected the shooting to be grueling.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;It&#8217;s a very time-consuming process, and I was actually a<br \/>\nlittle amazed at how quickly we finished; two days with 20<br \/>\nscenes and at least two set-ups per scene is a hefty<br \/>\norder,&#8221; Graves said. &#8220;This is my first video project for<br \/>\nNFSMI, and I think we were lucky to have experts readily<br \/>\navailable.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>While this project was to produce a learning video, Graves<br \/>\nsaid he hopes that &#8220;it comes across as informative but<br \/>\nsomewhat entertaining.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Stretch said she expects the video to be popular because of<br \/>\nits important content.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;Food inspections are important in any food service<br \/>\noperation,&#8221; Stretch said. &#8220;The video simply emphasizes key<br \/>\npoints for the inspection as well as recommends best safety<br \/>\npractices that will help ensure the safety of children.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>The video is slated for Web-based release in early 2008.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>For more information on the National Food Service<br \/>\nManagement Institute visit<br \/>\n<\/span>\n<\/p>\n<p>\n<span><a href=\"http:\/\/www.olemiss.edu\/depts\/nfsmi\/\"><br \/>\nhttp:\/\/www.olemiss.edu\/depts\/nfsmi\/<\/a>.<br \/>\n<\/span><\/p>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>\u00a0 Matthew Graves (left) directs actor Mimmye Goode of Memphis in a food service prep video.
