{"id":518,"date":"2008-03-10T14:18:52","date_gmt":"2008-03-10T19:18:52","guid":{"rendered":"http:\/\/ezing.me\/transfer\/?p=518"},"modified":"2014-09-23T09:24:42","modified_gmt":"2014-09-23T14:24:42","slug":"nfsmi-offers-training-program-to-promote-healthy-cooking-for-children","status":"publish","type":"post","link":"https:\/\/web20.olemiss.edu\/news\/wordpress\/nfsmi-offers-training-program-to-promote-healthy-cooking-for-children\/","title":{"rendered":"NFSMI Offers Training Program to Promote Healthy Cooking for Children"},"content":{"rendered":"<h3><span style=\"font-family: Arial,Helvetica,sans-serif; color: #000000\"><i>&#8216;Cooks for Kids&#8217; promotes healthier eating and involves everyone<\/i><\/span><\/h3>\n<p>\n<span>OXFORD, Miss. &#8211; Nearly one-third of American children are<br \/>\noverweight or are at risk of becoming so; however, the<br \/>\nchildhood obesity epidemic can be corrected by making<br \/>\nsignificant changes in eating habits and lifestyles,<br \/>\naccording to the U.S. Department of Health and Human<br \/>\nServices.<br \/>\n<\/span>\n<\/p>\n<p><!--more--><\/p>\n<div style=\"border: 1px solid #000000; margin: 6px; padding: 4px; width: 300px; float: right; background-color: #ffffff\" class=\"jce?caption\">\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ezing.me\/transfer\/wp-content\/uploads\/stories\/03-2008\/nfsmi.jpg\" alt=\"nfsmi.jpg\" style=\"border: 1px solid #000000; margin: 0pt; float: right; width: 300px; height: 275px\" title=\"nfsmi.jpg\" height=\"275\" width=\"300\" \/><\/p>\n<div style=\"padding: 4px; color: #000000; text-align: left; clear: both\" class=\"jce?caption?text\">\nHoward Helmer (left), billed as the &#8220;Omelet King,&#8221; demonstrates how to make a perfect omelet for Greg Mezey, host of &#8220;Cooks for Kids &#8211; Celebrate Breakfast&#8221; during filming for the program.\n<\/div>\n<\/div>\n<p><span>Because reversing the rapid rise in obesity among American<br \/>\nyouth requires an approach that includes schools, families<br \/>\nand communities, the National Food Service Management<br \/>\nInstitute at the University of Mississippi set out to prove<br \/>\nthat healthful and great tasting food for children can and<br \/>\nshould be served by everyone.<br \/>\n<\/span><\/p>\n<p>\n<span>The result is &#8220;Cooks for Kids,&#8221; a satellite training<br \/>\nprogram launched last fall that celebrates healthy eating<br \/>\nand highlights best cooking practices used in schools<br \/>\nacross the country, including Mississippi. The nine-episode<br \/>\nseries focuses on the responsibility of families, schools<br \/>\nand restaurants to offer healthful food choices for<br \/>\nchildren to combat childhood obesity.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;Obesity may be a personal issue, but it adversely affects<br \/>\neveryone,&#8221; said Charlotte Oakley, NFSMI executive director.<br \/>\n&#8220;We all bear the responsibility of helping to promote<br \/>\nhealthier eating, especially for our children.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Each episode offers best practice tips on preparing<br \/>\nhealthful, child-friendly meals. Programs in the series<br \/>\nthat have already aired via satellite can be viewed online<br \/>\nat http:\/\/www.nfsmi.org\/ and on some PBS stations. Handouts<br \/>\nfor each program and a schedule of upcoming episodes are<br \/>\nalso available online.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Remaining programs, to air via satellite the second<br \/>\nThursdays in March, April and May, include &#8220;Celebrate<br \/>\nBreakfast&#8221; March 13, to mark National School Breakfast<br \/>\nWeek, March 3-7. For the episode, the NFSMI team traveled<br \/>\nto California to highlight the food service staff at<br \/>\nVentura Unified School, which is noted for serving<br \/>\nhealthful, fresh foods and demonstrating best food<br \/>\npreparation practices.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;&#8216;Cooks for Kids&#8217; focuses on what we as professionals can<br \/>\ndo in supporting healthy eating for children,&#8221; said Sandy<br \/>\nCurrwood, director of child nutrition services of the<br \/>\nVentura Unified School District. &#8220;We live in a time of<br \/>\nwidespread availability of food options and choices, so<br \/>\nit&#8217;s up to us to support healthy eating and encourage<br \/>\nactive living for our children. It&#8217;s our responsibility,<br \/>\ntoo.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;Spring Salads,&#8221; slated to air April 10, focuses on ways to<br \/>\nprepare salads as a side dish or as a main course and<br \/>\nfeatures a school that inspires its students with a school<br \/>\ngarden. The last program in the series, &#8220;Wrap it up with<br \/>\nWraps,&#8221; airs May 8.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Previous episodes, which are available by webcast, are<br \/>\n&#8220;Succulent Side Dishes,&#8221; &#8220;Pizzas with Pizzazz,&#8221; &#8220;Sumptuous<br \/>\nSoups,&#8221; &#8220;Healthy Whole Grain Breads,&#8221; &#8220;Perfect Pasta&#8221; and<br \/>\n&#8220;Fruits Go Back to School.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>Funded by a grant to UM from the U.S. Department of<br \/>\nAgriculture, the series focuses on healthful food and<br \/>\ncooking techniques not only at school but also in<br \/>\nrestaurants and at home. Cooks can learn how to incorporate<br \/>\nlocally grown fresh fruits and vegetables into meals at<br \/>\nschool and at home, plus pick up on methods used by<br \/>\nrestaurant culinary professionals to produce foods that are<br \/>\nflavorful, nutritious and appealing to children and the<br \/>\nentire family.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;&#8216;Cooks for Kids&#8217; is not just aimed at school cooks but to<br \/>\nparents, restaurants or anyone who desires to cook great<br \/>\ntasting healthy food for their family,&#8221; Oakley said.<br \/>\n<\/span>\n<\/p>\n<p>\n<span> Contrary to popular belief, the school nutrition<br \/>\nprogram did not create the childhood obesity<br \/>\nepidemic, Oakley added.<br \/>\n<\/span>\n<\/p>\n<p>\n<span> &#8220;School programs are addressing the problem and<br \/>\nstriving to meet standards,&#8221; she said. &#8220;Our job is<br \/>\nto tell their story and support their efforts of<br \/>\nproviding only healthy food at school.<br \/>\n<\/span>\n<\/p>\n<p>\n<span> &#8220;With this series, we send a message to schools,<br \/>\nparents and communities that the school system<br \/>\ncannot correct all obesity problems. We all have to<br \/>\nwork together.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span> Amy Casteel, NFSMI lead school meals specialist,<br \/>\nagreed.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;Training is our focus,&#8221; Casteel said. &#8220;We simply want to<br \/>\nget best cooking practices and preparation, plus<br \/>\ninformation on menu planning and nutrition, to the public.<br \/>\nWe encourage school nutrition personnel to share our<br \/>\ninformation with PTOs, PTAs or even their favorite<br \/>\nrestaurant.&#8221;<br \/>\n<\/span>\n<\/p>\n<p>\n<span>It&#8217;s this integrated look at a child&#8217;s total eating<br \/>\nexperience that makes &#8220;Cooks for Kids&#8221; unique. The programs<br \/>\ndemonstrate how everyone can and should work together to<br \/>\naddress childhood obesity, Casteel said.<br \/>\n<\/span>\n<\/p>\n<p>\n<span>&#8220;That&#8217;s why NFSMI invites all food service assistants, food<br \/>\nservice managers, food service directors, state agency<br \/>\nstaff and parents to view the satellite seminar,&#8221; she said.<br \/>\n&#8220;It doesn&#8217;t matter to us if you view the training video by<br \/>\nsatellite or Web. It does matter to us that you use the<br \/>\ninformation provided.
